Cooking, Thai Style



Here is the traditional dish, Pad Thai, which is cabbage, carrots, green onions, an egg, meat or tofu, noodles, and herbs and various seasonings. Quite tasty! And, we made it! Here’s the story.

We made reservations yesterday for a four-hour cooking class at a little hole-in-the-wall restaurant that had a sign for classes. The class was scheduled for today (New Year’s Day) at 1pm. When we arrived at the restaurant, they told us to get in a taxi because the class was at another location. It turned out to be at a small resort called the OK View Resort. The name is an understatement to say the least.
Our teacher met us and showed us to the kitchen. We each made three dishes after the teacher demonstrated the techniques. Her English skills were fine and she would always demonstrate something if we didn’t understand. My three dishes were red curry with chicken, Tom Yum soup with shrimp, and Pad Thai. Caroline’s were green curry with tofu, coconut soup with tofu, and Pad Thai. Most of the ingredients are readily available at home, some may have other names. The most unusual one was galangal, which is somewhat like ginger. Lemon grass and kaffir lime leaves are two other ingredients that I’ll have to go find.
